A good Greek SPOOL lamb (salt, pepper, olive oil and lemon) on a spit. BIO: Spike works as the chef de cuisine at Tribeca's new hotspot restaurant, MAi-House, which was named as one of the New York Times' top ten best restaurants. Born in Montreal, Canada and trained in classic French cuisine in restaurants around the world, Spike has worked with Gerard Boyer at Les Crayeres, Thomas Keller at Bouchon and The Maccioni Family at Le Cirque and at Good Stuff Eatery in Washington D.C. Spike believes in learning the basics to become the best. His latest venture is opening a new chain, Good Stuff Eatery, with his family. | Re: Spike - Season 4 I do like his SPOOL acronym, but "PIG" really? What chef calls pork "pig" but I guess maybe if you're cooking it whole on a spit, but then most people I know call it "hog" rather than "pig". It's not a pretty word. I just remember explaining to my daughter that pork is pig meat, beef is cow, etc. yet for some reason chicken is just chicken. Hmmmm.

| Re: Spike - Season 4 It's a bit early, but I think I found my guy to root for. He's no Mikey (S2), but he seems like he could be a fun, laid-back underdog.

| Re: Spike - Season 4 He wasn't going to be the top chef, but it was too bad he had to go on the same week that he won the quickfire for his butchering skills. I was hoping Lisa was going instead. Oh well. I knew he was doomed when I saw the clip (that was aired during this episode) of Spike, Andrew, Mark and Erik and their band.
