Looks like neither dessert (Richard or Mike's) is very popular. The foie gras ice cream was crumbly and .... beige.
The judges were split into 2 groups ... group 1 went to Mike's restaurant first, group 2 went to Richard's first, then they swapped.
Looks like Richard was tweaking the not-so-successful ice cream for round #2. Looks like it was a bit better received the 2nd time.
Both Richard and Mike were complimentary to all three of their sous chefs.
JUDGES TABLE ...
Padma said both did a wonderful job and Tom said it was the best food they've had in any finale. Gail said Mike's food had finesse. Gail called his pepperoni sauce a stroke of genius. His custard was a bit overcooked.
Gail said Richard's flavors were extraordinary. Tom said his hamachi was his best dish.... really successful. Padma said the black cod was flawless. Tom said his beet dish was safe, but well done. Tom asked about the 2 versions of the foie gras icecream.... Richard said the second batch was softer.
Mike wanted to show the chef he's become.
Richard wanted to show his creativity and whimsy and that it's about the guest.

Everyone loves Richard's second course. Hubert said Richard went an extra step.
All loved both braised courses. Richard's dish didn't blow them away.

How can the judges not talk to the sous chefs this time? They've done that in other finales, and it's even more important this time, because being Top All-Star means you're not just the best chef, but the best leader. Strange.
Mike showed us a whole other side to him, but I'm still hoping Richard takes it.
