CULINARY EDUCATION: Self-Taught

FAVORITE SIMPLE SPRING RECIPE: Roast New Zealand venison, minted edamame, wee fella Yorkshire pudding and espresso hollandaise.

BIO: Born and raised on a sheep farm in New Zealand, Mark developed a great appreciation for cooking from scratch. After leaving school at the age of 16, he went to work at a slaughterhouse before leaving New Zealand to travel the world. Over the past eight years, Mark has worked his way up the kitchen ladder from dishwasher to sous chef and has worked in New Zealand, Melbourne, Tokyo, and New York.

he worked at a slaughterhouse, and has worked his way up in the food industry starting as a dishwasher. I think Marcel wouldn't last a day in a slaughterhouse. Now I'm picturing Marcel washing dishes with one of his "foam" inventions (I always picture Marcel as Jimmy Neutron in my head - it's the hair). While there are some physical similarities in their looks, I think that their backgrounds are so different that their styles are probably pretty far apart. Of course I've never had wee fella Yorkshire pudding, so maybe it has a gastronomy-intensive foam.

He looks like one of the contstants from last season "Sheer Genius". I can't remember his name. He had the same curly do on a few episodes. I don't know about this guy, he looks like he could be a snob
