    Brian - Season 3

    Brian

    AGE: 34

HOMETOWN: Bend, Ore. – currently resides in San Diego, CA

PROFESSION: Executive Chef, The Oceanaire Seafood Room

    CULINARY EDUCATION: Western Culinary Institute

FAVORITE SIMPLE SUMMER RECIPE: Cold Beer, Cold Wine & Cold Seafood

A native of Oregon, Brian grew up inspired by his grandmother's cooking and by all the fresh seafood and produce the area offered. He soon set his sights on California, where he was recently voted 2007 Best Chef in San Diego for his work as Executive Chef at the Oceanaire Seafood Room. He's in constant competition with everyone in San Diego and makes it a point to do everything bigger and better in his restaurant. At the top of his game, Brian's high-energy makes him a whirlwind in the kitchen. Stay-tuned to see just how long he can live by his motto, "Love, peace and happiness."

Going by what he said to the judges when he won that challenge, I think I know what he meant. I think he's going to have really big highs and really big lows and nothing inbetween. He gets some great ideas that normally wouldn't occur to anyone and if they work, he'll outdo everyone and wow the judges. But if they don't work, it will be a honking mess that will land him at the bottom.

I get like that in other areas, Come up with some really good and creative ideas that work out great - but then come up with some what-was-I-possibly-thinking clunkers like "edible socks"

    socks, yummmmm Shady, sounds great.

He does need to try cooking more meat though, Mr. Seafood. I had a hard time recognizing him when he wasn't wearing his hat last episode.

Brian is my favorite of this season. I think it's because he is a sea food chef and I LOOOVEEE seafood more than anything.
The first time that he stood out for me was during the EPISODE 2: Sunny Delights with his perfect seafood sausage.
AND I loved his energy in EPISODE 7: Guilty Pleasures. Now, he'd be the chef I'd like to eat with. I hope he goes far in this competition and I do hope to have an honor (someday) to eat at his restaurant.
