What was your first job in a kitchen?
Garde Manger. I've loved the kitchen ever since!
What is the first dish you ever mastered?
Macaroni and cheese. I was a teenager the first time I prepared it for my family. It was on a holiday and one of my older sisters complimented my mom on how delicious it was. She was surprised to find out it was me that made it. It's still one of my favorites dishes to prepare and eat.
What is your signature dish?
Cod and Mahogany Clam Chowder
Any stories of triumph from the kitchen? Disaster?
I have lots of triumphs and disasters. Once while I was farming, I picked 120 pints of wild berries in two days. I was told it would be impossible, but I did it! One of my worst kitchen disasters happened when I was a kid. I invited my friend from next door over to make spritz cookies on my mom's late night of work. She came home to her butcher block cutting board glued to the table AND there were no cookies.
Who was your first cooking inspiration?
My first inspiration came from my parents. They had their own cooking styles and I loved to watch them cook. My mom and I watched kitchen shows on the weekends and very often we were in the car driving around to farmer's markets and farms picking up local ingredients.
What's the one piece of advice you took away from Hell's Kitchen?
Don't be afraid to try or even to fail, be afraid of giving up.
