What was your first job in a kitchen?
A Garde Manger line cook.

Chicken Parmesan with my mom.

Seared Black Grouper

Any stories of triumph from the kitchen? Disaster?
I've worked my way up continuously in my career and have achieved nothing less than triumph in the kitchen. I have most recently moved from being a Sous Chef at STK Miami to the Executive Sous Chef of STK Midtown.

Who was your first cooking inspiration?
My mom. In the culinary world, my first inspiration was Chef Farfan, Sous Chef to Radek Carney.

okay, did anyone else find it unfair that Chef called his boss to light a fire under him??? Totally not fair.

Royce seems to be doing better since he talked to his boss though. He hasn't messed up as badly on his station.
However, he has an inflated sense of how wonderful he is. I can see why his teammates can't stand him!

ICAM. I think the only reason they did that was because his boss was in the finals for the first Hell's Kitchen.
