When it comes to a good maitre 'd, Jean-Philippe is at the top of his class. He has worked in restaurants all over the world and is extremely knowledgeable when it comes to wine and cuisine. He also realizes that a good maitre 'd is not just about the food. His job is to make sure that every single patron leaves his restaurant with an experience they will never forget.

I have to give this guy credit. He puts up with crap from Gordon, the contestents, and angry customers all the time and he's able to handle all of it.

I watched part of the first season the other day, and I loved it when he told Ralph "if you call me Jean Pierre one more time, I'm going to have to kill you".

Yeah, I saw that. Remember last season when he said he was going to get a beer or something. Some of the things he says are hilarious.

He was great on The F Word. He gave it back to Ramsey just as good as he got.

That was Jean-Baptiste, who is actually French, not Belgian. He also seems younger, and maybe a bit cuter (if not a bit froggy) than Jean-Phillipe. I guess Ramsay likes his Maitre d's to have some iteration of the name Jean.

I wish we knew more about him. He does much to make the show.

Shrinking Violet could interview him! Yeah! Although I suppose he would then be assigned to the trash heap along with dear Carolyn from The Apprentice for being too uppity.
