Yep, my uncle owns a buffalo ranch so I've had a freezer full of the stuff for a long time and he's always sending more home with us. I prefer buffalo over beef, especially the hamburger. When I brown the burger for taco meat or sloppy joes, there's nothing left to drain off. It's that lean.

kerowyn is absolutely right about being careful how you cook it. You have to cook steaks slowly over low heat or they become shoe leather. But once you're used to cooking with it, it's awesome stuff!

There has not been a winner in any season of Hell's Kitchen that was capable of being more than an Executive Sous Chef. Perhaps if the restaurants were the Olive Garden or Claim Jumper they might have been adequate to the task of Executive Chef, but the caliber of restaurants to which the 'chefs' were to be assigned in all four seasons were clearly above the abilities of the winners. The first two winners left their respective restaurants because no owner in their right mind would pay them $250,000 beyond their 'prize' contract.

I like the two remaining contestants. Of all the contestants this year, they are probably the most qualified. It's hard to argue that, each week, there was someone who deserved to stay more than Petrozza and Christina. They earned the right to be the final two, even if by default. As to last night, Christina may have done a poor job at her station, but the Executive Sous Chef position won't require the winner to cook on the line, but to run it. Clearly, Corey was the least capable last night in that capacity.

In the end, whomever wins, they will follow in the footsteps of those winners who came before them. They will live out their contracts in the window of their kitchen, shaking hands and signing autographs, and, when their contract is up, they will forever disappear into the culinary aether.

I agree. If Christina was still in the game enough to try while her family was there, that should have been rewarded somehow. Not to mention, I would have loved to have seen what the two that paid no attention to the food at all came up with! By letting them all taste it again, I feel it took some of the challenge out of it.

Neither of these two could manage my outhouse much less an establishment that sells food. Petrozza is a nasty cook and Christina is not even on the level of Julia from last season. This whole season has been a waste of time and not one contestant is worthy of even cooking me a Big Mac from McDonalds.

I forgot about that part. That should be entertaining. Woo-ah! Nobody's wanted her on their team the entire season. Won't if be funny if they choose sides and she's the last one picked? I'm sure she'll find a way to rationalize that it's because they're afraid she'll outshine them, because she DESERVES the win. Congrats to the final two. Kind of a wimpy season this year.

I loved the "eat it, then make it" challenge. Ramsay's written in his book that it's one challenge he regularly gives out to cooks he hires, and I was pleased to see it on HK. Has it ever made an appearance before?

Yes, in season2, he did the same thing to the final 3. Virginia won, and Heather + Keith were quick to call shenanigans, because Virginia had a copy of Chef's book, and they figured that she read the recipe from there
