I'm so looking forward to Easter. If only because on Wednesday I am going home for it!! Spending time with my family and friends back home whom I miss dearly will be the best part.
Interestingly, this is the earliest Easter in over 95 years and it won't be this early again for over 200 years. Yes, two hundred!
We get both Friday and Monday so woo-hoo, four day weekend!
One bad thing about this early Easter is that May 1st and Ascension Day (both national holidays here) coincide so we're loosing a day off.

We used to do a ham and scalloped pineapple casserole which is to die for, but I've got a taste for lamb right now.

My my...I just looked at our holiday schedule and Friday is not a holiday for us. I guess Martin Luther King Jr day took our good friday away. Politically correct holiday's all the way around.
Yup, with donuts!!
I'm quoting myself, how narcissistic. Anyway, my boss just granted me to take tomorrow off soOriginally Posted by femme fatale;2850090;
Woo-hoo five day weekend!!
I've never cooked lamb and can't do ham this year with a Muslim in the house. I'll have to go to the recipe thread and see if anyone is dropping tips there. I did get more corned beef for the crockpot so I can just do that.
Count your blessings!
