    JR,
I totally understand. I did not like anything about zucchini or yellow squash until I was a teen. Then it was only the fried kind my aunt made. As an adult, I have enjoyed it very much. My taste for things changes every few years. I used to never eat bell peppers or onions and now they are a major part of my diet. They also fulfill my need for a colorful plate. Hehe!
It occurred to me that no matter how bleak things might seem at times, at least I have a head. ----Stargazer

Btw everyone, I did make this one day and took it to work and it was a HUGE success!! I printed out about 20 copies of the recipe and they were all gone.

I'm not really big on zucchini, but one of my all-time favorite cakes uses it. Try this one if you get a chance...

    Zucchini Cocoa Cake

    Blend together
    1/2 cup margarine or butter
    1/2 cup oil
    1 3/4 cup sugar

    Add
    2 eggs
    1 tsp vanilla
1/2 cup sour milk (add 1/2 tsp vinegar to milk)

    Sift Together
    2 1/2 cup flour
    4 Tsp cocoa
    1 tsp soda
1/2 tsp salt, cloves and cinnamon

Stir in 2 cup diced zucchini
Pour into 9X13 greased pan and top with 1/4 cup chopped nuts and chocolate
    chips
    Bake 325 for 40-45 minutes

Yummy! You don't taste the zucchini at all, but it makes for a really moist cake.

When are you going to just publish a book of recipes, Z?
