    Actually, that shouldn't have made a difference. I've done that before myself.

    I don't think two day old potato salad would do it. I done things like prep a day or two ahead sometimes. I DONE??? yikes. Should read I've done....

    Besides, its not usually the veggies that are the culprit in food poisening in potato salad, its usuallly the mayo.

    Actually if I'm having a party or a big do, I tend to break up my cooking so I don't have to do it all in one day and get way to exhausted to enjoy myself. I typically will start several days or even weeks ahead (I freeze stuff too. )

    I saw an article recently that said mayonnaise is not so dangerous as they once thought, due to the acid content in the lemon juice and the oil keeping the eggs from growing large amounts of bacteria. I don't know if it's true or not--anyway, I'm always picky about the temperature of food that is supposed to be cold or hot.
    I work ahead when I have a lot of cooking to do also; if you don't have several cooks and a commercial kitchen I don't see much other choice.
    I have found the Truth and it doesn't make sense.

    When I was in my 20's and 30's I would go for days cooking for an annual friends get together at my place. Into my 40s I cooked for family only and did it all in one day. Now I order in.
