    Ugh. I think not. What the heck is wrong with a strainer or at least a disposable glove? He could have kept the egg.

    That is kinda gross. I just buy the pre-sorted egg whites from my local Whole Foods. What restaurant was this?

    With his hand? Well, that's pretty unsanitary. I just juggle the yolk around between both half-shells, until all the white has seeped through.

    Yeah... I wouldn't want to eat that... He couldn't at least use the shells to separate them?

    Well, using the shells is rather unsanitary. His washed hands are cleaner than a shell... unless you scrub your egg first.

    The back-and-forth shell technique is what I'd always seen. This guy's strained fingers approach was new to me. I was pleased that I hadn't asked for just whites.

    It was at Terrible's Hotel and Casino, dvm, just off the Strip. Ironic name, I suppose. The rooms are nice, and the prices were reasonable, though. And I guess if you didn't want egg whites, you were golden.

    Of course, the inside of the shells. But I've read that this process is unsanitary because the egg often touches the outside edge of the shell and can run down the outside of the shell a bit. And we all know from where the egg comes. Just something I read once.

    I've heard that too touque. I personally think it's easier, and as long as you wash your hands before, you're good. It is much faster, and more fun! That's the way the pastry chefs at a HomeChef classes teach it, so I figure they know more than I do.

    As for eating eggs, I think they're absolutely NASTY. I can't even imagine eating them. Ick.
