    Dinner yesterday: herb-roasted lamb with potatoes and garlic, roasted fennel with Parmesan, and coconut cake (with homemade lemon curd filling). (We don't exactly celebrate Easter, but it's pretty much the one time of year I make lamb because my husband doesn't really like it.)

    Hash. I took all the leftover veggies from yesterday (potatoes, fennel, and carrots), and added onions and apples. And some diced ham.

    Little pizzas, with Trader Joe's Whole Wheat Middle Eastern flatbread as the crust:
    One was topped with chèvre, sliced artichoke hearts, fresh asperagus tips, and lemon zest. The other was topped with reduced marinara sauce, red and yellow bell peppers, crimini mushrooms, chicken Italian sausage, and shaved Parmesan.
