My cholesterol test is Sat. a.m. so I'm paring way back for a few days. I just had a big bowl of swiss chard with balsamic vinegar and now I'm going to have baby carrots with a little hummus. My daughter made flourless chocolate cupcakes for after the test.
Chicken souvlaki with rice and veggies at the little Greek place down the street. So yummy! I managed to avoid the sweets shop next door, but caved when the owner sent us over a plate of hummus and warm pita. I'm only human!

What was good? My son got the "outstanding male athlete" award for his school for swimming :-) He got a trophy and his name is being engraved on a plaque that goes wherever the sports stuff goes in the school. (PS I burst into tears when they announced his name.)
It made the salad and pizza totally worth it :-)

Speaking of pizza, I'm having homemade crescent roll pizza tonight for my Friday treat. It's so simple to make and really yummy. I don't miss take-out pizza and wings at all when I can make pizza at home that tastes this good! And best of all, it doesn't wreck my diet.

Thanks, pikachu and Fanny Mare (and Cootie and coltnlasma) :-) The only sad part about it was that none of the school administration was there (no principals or vice principals or even the athletic director), and they haven't updated the school website yet. Swimming is low sport on the totem pole <sigh>.
