Dinner tonight? A stiff marguerita... I've had a rough day. Don't judge. Alcohol curbs my appetite, but if I'm hungry later, I have leftover veggie/bean soup.
The soup adds a creamy texture, liquid and chicken taste. You might try by substituting with chicken broth or if you can eat it, make a white sauce from chicken broth, flour and butter.
No judgements from me! I would drink a marguerita too, if I could.

I am going to have something with the leeks I just pulled from my garden. They have overwintered and look pretty good. Any suggestions?

Beef stew and cornbread. I made a big enough pot that I could share some with my sister and uncle.

Beet salad. And leftover potato leek soup with grilled chicken thighs and asparagus pieces.

I love beets and add them to green salads. After looking at several beet salad recipes and seeing it here, how do you all make your beet salads?

Chilli...probably for the next few days.

inthegarden, I like a simple cold beet salad of sliced beets, a little garlic powder, some cider vinegar mixed with olive oil.

Well, it's Sunday so the meat sauce is simmering until dinner time. Big decision- will it be spaghetti, ziti, fusilli, or farfalle pasta? Spaghetti is probably my least favorite pasta to have with a meat sauce.

Beets, salad greens including spinach, goat cheese, walnuts... a light balsamic vinegar dressing.
