    Mmmm, I love squash dressing. There would be none left over at my house.

    Tonight we had roasted chicken breasts, brown rice, and zucchini fritters with a cucumber-yogurt sauce.

    ^It's a version of cornbread dressing with squash in the mix. (Dressing is sort of like holiday stuffing, but more moist, and baked in a casserole dish instead of the bird.)

    I have a pork roast in the crockpot for dinner tonight. Using a recipe posted here on FoRT a few years ago - I think it was for Cuban pork sandwiches - it gives a great flavor. Making black beans and a mango salsa to go with.

    Okay, thanks for clearing that up. I never equate the word 'dressing' with anything other than salad dressing. I was a bit confused. I think we've had this discussion here before... what you call what you eat with Thanksgiving turkey. I was unaware that others call it 'dressing' and keep forgetting. I love squash so I am going to check out that recipe. Thanks, nennie.

    Thanks nennie. My recipe is about the same but, I like to use left over cornbread in my dressing. I don't care for the sweetness of some of the cornbread mixes. You can use cornbread stuffing instead. I'll revive the recipe thread and post the recipe I use there. I found that squash dressing is a good alternative to squash casserole when I'm trying to use up frozen squash.

    Stir fry vegetables over brown rice topped with grated extra sharp white cheddar cheese.

    Creamed soups are not really on my list of things I can eat. Can anyone point me to a healthier recipe? I'm intrigued with the squash/cornbread combo.
    Dinner tonight? A stiff marguerita... I've had a rough day. Don't judge. Alcohol curbs my appetite, but if I'm hungry later, I have leftover veggie/bean soup.
