    Lots of soup tonight! We had soup too, it's rarely cold enough in Houston to really appreciate a steaming bowl of goodness so we take advantage. I made Pioneer Woman's chicken and dumplings. It was a winner. I think next time I'll do different dumplings (like plain old Bisquick or maybe cheat even further and just pop open a tube of biscuits) but the soup part was perfect.
    One of these days I'll stop being sensitive. Until then, I'll continue to be devastated on a daily basis. Life breaks my heart.

    Tonight was our last home swim meet, so hubby and I split the leftover "stuffing" from the peppers and my son (who eats two meals on a night with a swim meet, one before and one after) ate the shrimp stir fry and then a couple of sandwiches.

    Tomorrow night, my vegan friend is coming over. I'm thinking tortilla soup. (I'm much better with vegetarian meals than vegan meals.)

    That's what I did last night too, FM. Nothing in the house I wanted to cook and it was too cold to go out.

    Going to a church group get together for the 50+ group and it is potluck. I am taking stew and cornbread. Hoping there is some good food there.

    Are you kidding? Churches have the best potlucks. I had a salad of baby arugula, baby kale, watercress with asian sesame dressing and leftover red lentils cooked with carrots and parsnips with rice.

    So I made the soup :-) Totally vegan and really good...except it wasn't spicy enough (for anyone but me, which tells you just how bland my taste buds are), although it was loaded with veggies (yellow squash, zucchini, onions, tomatoes, peppers), and I also added a can of black beans. I also made guacamole and served it with sour cream and tortilla chips. Oh, and for us non-vegans, I sauted some shrimp in olive oil, butter, and garlic chips.

    And then I made brown-butter banana bread for a snack. Which wasn't totally vegan ;-), but she had a small piece and liked it.
