Normally I have dinner out with my Little Sister, but we're expecting freezing rain, so I won't risk it. Leftovers and a salad.

Vegetable beef soup in the slow cooker. It's been COLD here and soup is the only thing I want. Plus, cooking it in the slow cooker means the house smells good all day!

Pizza here too! And tonight we have peanut butter cookies and my son's favorite apple cake for dessert. We never have dessert after dinner but it's my son's birthday and his friends are coming over before they take the train into NYC to party.

I am way way too full. Holidays are nice, but I am so sick of food. I am having hot soup and a really really early night.

I made stuffed peppers tonight :-) Even my son ate one (although I think he avoided most of the pepper.)

I'm going to a council of the blind meeting and I'm going to eat there. I'm treating myself to my first fast food since the New Year--a Daily Double and side salad from McDonald's. I've worked it into my diet plan and I'm going to bring salad dressing from home to cut back on the fat and calories (for some reason McDonalds doesn't have light or low-fat ranch dressing). I'll have a snack of pretzels, jello, an apple and milk later on before going to bed. If I eat too early in the evening, I end up too hungry to get to sleep so I reserve some food to have around 8:30.

I love chili... and am always looking for different ways.... style/twist in making it. I tend to like it with more veggies than meat and definitely on the spicy side.
