Going out to dinner with one of my mother's friends. So steak or lamb chops are in my future!

    Re: What's For Dinner TONIGHT?

Amazon Fresh had a good deal on those Tyson Tastemakers meal kits (sort of their version of Hello Fresh or Blue Apron). It was $5 vs. the usual $15.99. I got the apple cider-glazed pork medallions with sweet potato and Brussels sprouts hash. Very good, although a lot of sauce. I'm not a big sauce girl. The pork was very tender, which is always a concern: it could have been like hockey pucks. The meat portions were especially generous. Not so much with the veggies. I always want more veg and don't tend to eat a ton of meat.

I hadn't realized how much the kits cost regularly, so I don't think I'd ever get one again, but I liked the veggie hash enough to make it myself and put my own spin on it. I eat A LOT of sweet potatoes and Brussels sprouts in the winter! Never have paired them, for some reason.

I made a ham sandwich and I love when I spread just enough mayo and mustard on the bread.

I've got tomato soup cooking in the slow cooker to be paired with grilled cheese sandwiches for dinner. It's gotten quite cold and windy.

I'm making an early dinner since I have to volunteer tonight. Veal scallopini with olive oil and lemon.
