    Instead of stuffing the bell pepper with the browned chopped meat and onion, I cut the peppers into strips and then mix with the meat and tomato sauce and bake. I also microwave the pepper strips beforehand b/c it shortens the baking time. Some people stuff their peppers with meat AND rice, but I have always plated the rice and served the pepper on top.

    I figure that since you have to cut the pepper open to eat, you might as well deconstruct it before baking as it cooks quicker.

    I'm baking boneless skinless barbecued chicken thighs, instead of wings. No bones, and supposedly really tender. We'll see!

    Had no idea what to make so peeled and grated 2 potatoes and an onion and made an egg, potato, and onion frittata for dh and me. Cold beet salad on the side.

    We needed comfort today so I made a great hash brown casserole recipe I have. Maybe not the healthiest but it was good comfort food and we had salad too, and we went running with the dogs while it baked. Now I'm full, comforted, and ready to go to sleep
