Chili (with black beans because I just don't like kidney beans that much), topped with sour cream and shredded cheese.
And tonight was flat iron steak (seasoned with garlic and onion powders) and cauliflower puree.
Aside: My kid is weird. Won't eat tomatoes, although he loves ketchup and spaghetti sauce. Isn't crazy about avocados, loves guacamole. Hates lettuce (just about any kind), so getting him to eat salad is a chore. And tonight, when I told him we were having cauliflower, he cheered.
Big salad - mixed greens, baby kale, baby spinach, onion, yellow pepper, cucumber, hemp seeds, and fig/tangerine balsamic vinegar.
No idea. I'm exhausted today. Maybe Thai delivery...

Lamb Vindaloo with Basmati rice and Tandoori Naan, all courtesy of Trader Joe's. I LOVE their naan, but this is my first time trying the Vindaloo. Might be a bit too spicy for me. My lips are still burning! I like a little "hum," from spicy food, but this is a full on burn.
Burritos. I modified Alton Brown's taco recipe (less salt, less heat) for the meat. Everyone liked them :-)

I love cooking its my hobby and my passion except for weekday dinners when I just do not have the energy and sometimes just can not be bothered so I love nights like tonight where I am home alone, actually I am home alone all week, so its melted cheese on toast

Wholewheat bread toasted and buttered right to the edges topped with tasty cheese and zapped for 20seconds in the micowave
