I LOVE swiss chard. And tonight I'm making white bean stew with swiss chard and tomatoes. Its really good and quick to make. Crushed whole tomatoes, garlic, splash of white wine, cannellini beans, red pepper flakes and salt & pepper.
Eastcoastmom, Yorkshire pudding is a savory pudding. You mix flour, eggs, salt, and milk; let it rest; and after the roast is done (while it is resting), you keep a little of the fat in the roasting pan and add the batter. It puffs up and you serve it in squares. It is *so* good. (You can also use oil as the fat, but it doesn't taste the same.)
I've got chicken soup cooking in the crock pot. Made with chicken stock, shredded chicken, carrots, potatoes, celery, onions, tomatoes, brown rice and seasoned with Cajun seasoning. I'll fry potato cakes to have with the soup. Comfort food for this cold spell and to help ward off the sniffles and a headache.
I'm having chicken fried steak and potatoes and a veggie.
I love my Brussels sprouts with bacon! I cook up a slice or two and then set them aside and cook sliced sprouts in some of the bacon grease with salt, pepper and garlic. I do it on low heat and let them caramelize nicely. Once they're done, I chop up the bacon and toss it in with the sprouts. My uncle, who HATES Brussels sprouts took two helpings when I did them for Thanksgiving.
I was at Trader Joe's the other day and they've got the spouts on the stalk now. I'm definitely going to pick some up this week!
Yup, we've been getting the sprouts on a stalk, too! It's such a limited time, so this time of year we eat LOTS of Brussels sprouts!
Last night I needed comfort food with all the Sandy stress so I made Jerusalem Artichoke pasta (DeBole's) with black truffle oil, pasta sauce, and parmesan.
Vegetarian friend found a recipe for pumpkin baked ziti. Recipe sounded great, didn't taste quite as good (although she loved it). Spinach salad with lots of fruits and veggies was good, though :-)
Whole roasted chicken seasoned with lemon pepper, and green bean casserole..
