    Corned beef, cabbage and potatoes are simmering for tonight's dinner. I try to limit beef to once a week, so instead of our normal Saturday night steak dinner, we're having the corned beef.

    I'm doing my corned beef for tomorrow night's dinner. I'm never home on Monday nights, so Sunday night it is.

    After last year's debacle with the super fatty, cut-rate corned beef. I sucked it up and bought a better brand. Last year, not only did mine have that layer of fat on one side, it had another big strip of it in the middle. What I ended up with was about 2 inches thick. Maybe. Total ripoff. I figured that, since I only do corned beef once a year, I should just buy the good stuff.

    I'm doing the corned beef, cabbage and potatoes thing tonight, too. And probably some Irish soda bread. We love corned beef so I usually get two and freeze one for later. They sure aren't cheap, though!

    I also made a sweet potato pie, cooling right now. Not really an Irish dessert, but I had sweet potatoes that needed to be used.
    It was me. I let the dogs out.

    Tonight we are having leftovers, which I normally don't care for, but this is my SPECIAL pasta casserole. I posted here about this dish when I first started making it last year to get input. I've worked and worked and finally have a dish that will knock your socks off!!!!!

    I finally settled on Ricotta cheese in addition to other various shredded cheeses, basil, onion, beef AND turkey sausage, and a good brand tomatoe and white cheese sauce. It does make a difference in the taste.

    It's now a big family favorite and my standby. Served with green salad and garlic bread, it's quite delicious.

    I'm in San Diego and had Mexican food. The boys baked the lasagna I made before I left. (But we had boiled dinner twice in the last two weeks...luckily, they go on sale the week before St. Patrick's Day :-) I just wish I had picked up one for the freezer.)
