    I got a chicken casserole thing from Costco - it had cheese, corn tortillas and chilis and was pretty good!

    Last night was rib-eye, sauteed mushrooms, and cauliflower puree.

    Tonight will be pot roast with veggies.

    That sounds so good right now. I have been craving roasted cauliflower with hot wing sauce.

    Tonight here we had chicken taco soup with cornbread, and apple crisp.

    A FB friend posted a low-carb zucchini lasagna recipe this week. So that's what we'll have tonight and tomorrow, with raw veggies on the side. :-)

    And on the flip side, we're having regular-carb lasagna tonight :-) I made the sausage earlier this morning, and the sauce is thawing. These days, when to serve dinner is more of a problem than what to make...the kid has lacrosse practice after school and the hubby works nights, so I try to fit it in somewhere between the two.

    I ran across this in a Facebook post earlier today. It sounds tasty and easy, so I'm making for dinner. I also have some chicken in the fridge and I've been wanting to try the Thai Green Curry Simmer Sauce I picked up at TJs, so I plan to do that as well.
