    Turkey soup on the stove right now. Onions, celery, carrots, potatoes, a can of corn into homemade turkey stock.....I'll add lots of turkey and maybe milk to turn it into a chowder in an hour or so. Perfect rainy weather food!

    Carrot Leek Soup from the freezer - it smells great and I don't have to cook! I am so glad I put some away for this rainy day.

    I need to do that more. I get tired of soups and stews that I make in the crockpot and end up either eating it all grudgingly or it goes bad and I throw it out.

    We're having de-constructed cabbage rolls -- or, as my husband calls it, Polish stir-fry. Since there are just two of us, we cut the recipe in half -- and still have leftovers.

    Polish Stir-Fry
    Ingredients:
    1 1/2 to 2 pounds lean ground beef or turkey
    1 tablespoon olive oil (or oil of your choice)
    1 large onion, chopped
    1 clove garlic, minced
    1 small cabbage, chopped
    2 cans (14.5 ounces each) diced tomatoes
    1 can (8 ounces) tomato sauce
    1/2 cup water
    1 teaspoon ground black pepper
    1 teaspoon salt
    (other seasonings, according to personal taste -- I like to add marjoram and sage)

    Preparation:
    • In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
    • Add the garlic and continue cooking for 1 minute.
    • Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.

    Yield: Serves 6 to 8

    Angelic, we're having chicken tonight as well. If it's Monday night, we're having chicken...we are such creatures of habit.
