    Leftovers! A 4lb. boned Leg of Lamb has a lot of meat! So tonight, leftover lamb, smashed potatoes, gravy and carrots. Tomorrow, lamb sandwiches. Usually the rest would be chopped up and set outside for the wildlife critters who come around at night, but I've found a recipe to take the leftovers one day more: Grecian Lamb Caesar Salad Recipe - Allrecipes.com Perfect! A salad to go with cheese ravioli from our freezer and my homemade, canned marinara! To get four meals out of this $38.00 cut of (Costco) meat makes it downright economical! Must do this more often.

    I made chicken leek soup with carrots and kale. I am pretty sure it will be tomorrow night's dinner, too. Mr. C is out of town for a few weeks so I will be having some leftovers. I made it low in salt & fat so I may have a little chocolate gelato for dessert.

    We went out to eat :-) My son works Monday from 3:30 to 9:30, and for the first time in ages, my husband got home at a reasonable time. So we went to this little Italian hole-in-the-wall that we love for baked ziti parm and meatballs with salad (with house dressing) and garlic cheese bread.

    Yum :-)

    (And I have enough for lunch tomorrow!)

    No clue :-( My original day included a webinar at 1 pm, dropping my son off to the bus for the swim meet at 3:30, swim meet until 6:30, and then a meeting in Boston until after 9 pm. The meeting got canceled and the swim meet didn't, so now I'll be scrounging food for the family when we get home about 7 pm.

    So...sandwiches, anyone?
