My son wanted duck for Christmas dinner this year, so it's in the oven. Along with the roast because a duck just isn't big enough for four people (my brother always shows up to eat).

I'm not sure what else we're going to have yet, but hey, I have a couple of hours to figure it out :-)

We had ham sandwiches for Christmas Eve and we went to my daughters today and had smoked brisket, pasta salad, baked beans, corn on the cob and yeast rolls. I mad a 4 layer cake of red velvet and white cake with cream cheese icing.

    This is what's great:
I'm going to my son & daughter-in-law's for Christmas Dinner in a few minutes. I have no idea what they're serving. It doesn't matter. The fact that they're bothering to do this & have a bunch of family get together is wonderful. They could serve me Progresso Soup & I'd be fine.

Roasted free-range chicken stuffed with aromatics (onion, garlic, lemon, orange, fresh thyme, fresh sage), risotto Milanese, brandied cranberry-orange sauce, sauteed spinach leaves, and maple-pumpkin pie.

    Re: What's For Dinner TONIGHT?

We did something different for our Christmas Eve family celebration dinner this year. We had a buffet of food, including, Chili beans, baked potatoes with all the toppings, ham biscuits, homemade chicken salad, cheese tray, vegetable tray, sausage balls, wrapped weiners, and an assortment of pies and cakes.

My brother brought a fruit cake a lady made for him. (He's the kind of sweetheart a lot of people love and older women love to bring him gifts. lol) Fruitcakes may have a bad name, but this fruitcake was something out of this world!!!!! OMG. So good!

Tonight we're having a new recipe I'm trying, called Crockpot Chicken Enchiladas. Comfort food on a blustery cold winter's day.
