It was, though my husband asked me to throw a sausage in it next time. *sigh*

Throw in some spices (cumin, red pepper flakes...)... simmer until the quinoa is fairly well cooked. Then puree.... add some chopped cilantro and lime juice and stir. It was so good I could have licked the saucepan clean.
I am going to try that. Husband has rules about when I can feed him beans. Pansie. Needs to learn how to hold his gas. I can eat beans ant day of the week.

I left off the quinoa because I could not find it. I used chicken stock instead of vegetable stock. It was yummy. But each time I ate it I felt an ounce of unkindness. I only used the chicken stock because I did not want husband turning his nose up at it. Next time I will use vegetable stock.

Glad you liked it. I got my quinoa at Target of all places, couldn't find it at any of the grocery stores.

You're kidding! It's pretty much a staple at ordinary grocery stores around here now. Easily found (several brands) next to rice, bulghur, farro, couscous, etc.

The discount stores often have couscous if there's a food section.

I do not like that commercial with the ranchers eating burgers watching cows. OMG. Gross.

I remember someone else posting that they couldn't find quinoa. We even have it in the bulk section at Safeway now. Organic, too.

I could not believe it last week - I found quinoa in Walmart Supercenter!

Of course, it could be from China and will kill you, but it's cheap.
