| Anyone got a recipe for... I've got a plethora of arugula at the moment and I need something more interesting than sprinkling it on eggs like an herb. I've tried sauteeing it up like spinach with garlic but it's just a little too harsh tasting. Any ideas? I also have some acorn squash - anyone have any good recipes? | |

| Re: Anyone got a recipe for... Can't help you with the arugula, but we bake the acorn squash like a pumpkin. Just cut in in half, clean out the seeds, add butter and brown sugar(my aunt adds syrup or honey to hers) and bake.

| Re: Anyone got a recipe for... Mmm, that sounds good lildago! I baked up a pumpkin this weekend and it made 4 loaves of pumpkin bread. I wonder if I could do something similar with the acorn squash? | |

| Re: Anyone got a recipe for... Arugola is great in salads. You can also make a pizza with mascarpone, prosciutto and arugola. I think you have to add the arugola at the end. | |

| Re: Anyone got a recipe for... I just love love love arugula with spinach, pine nuts, goat or feta cheese and a good balsamic vinegar! It is good fresh on a burger too for a kick! Love the prosciutto idea mmmm sounds good!!

| Re: Anyone got a recipe for... I love arugula, it has a slightly bitter taste. There is a gourmet deli near my home that makes an awesome sandwich. It consists of arugula, two thick slices of fresh mozzarella cheese, sundried tomatoes, balsamic vinegar drizzed, all on a fresh round roll! I used to buy it for lunch at time, now I make it at home! It really hits the spot when you want to eat healthy and light! |

| Re: Anyone got a recipe for... I have looked at many sites and I can't seem to find a recipe matching these ingredients so if anyone has a recipe close to it, please let me know. It's a dinner casserole and it has chicken, green chilis, cheese and rice. Probably a creamed soup or sour cream. Thanks |
