This is the ham/potato soup I'm making today. Again from allrecipes. I usually don't even bother making a recipe from there unless it is 5 stars. This one is hugely popular.

Delicious Ham and Potato Soup - Allrecipes




3 1/2 cups peeled and diced potatoes
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced cooked ham
3 1/4 cups water
2 tablespoons chicken bouillon granules
1/2 teaspoon salt, or to taste
1 teaspoon ground white or black pepper, or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk

DIRECTIONS
Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

I need a recipe for leftover mashed potatoes. I am swimming in them!!! I was thinking of gnocchi and MRD posted a recipe for potato pancakes..

I love to stuff bell peppers with mashed potatoes and put them in the oven, cover them with cheese and bake for 30 minutes.

Gnocchis are always my first choice. But I also make Shepherd's Pie with the leftover potatoes. It's one of my husband's favorites.

Sorry, I didn't have a recipe for gnocchi. But we enjoy the potato pancakes immensely.
There's so many things you can do with leftover mashed potatos.

Oh, I have a great recipe for gnocchi but I was looking for something different. I think I will make both gnocchi and the pancakes. Thanks!!!!
Although I love Shepherds Pie, it's hard to get into it right now with the weather around her being so warm. I would love a recipe if anyone has it for another time!

Our evenings are cooling down so much once the sun goes down. Today was 75 deg with horrible dryness but I still have a turkey breast in the oven.

Mashed potatoes can also be put into a casserole dish and baked with butter on top. It's like twice baked potatoes without the skin.

Thanks for the gnocchi idea lginger! We had cold, icy weather today so it was the perfect day for them. I even happened to have on hand all the ingredients for my Mom's sauce recipe so we never even had to leave the house!
