. . . Berenjenas Rellenas is actually a favorite appetizer among Cuban nationals – so if your gusts know you’re serving this, your sure to attract a real Cuban element to your party! . . .

Mariner, Myrosiedog and Bunny--thanks so much--those all sound really good!

I'm so glad I asked here.

Thank you. I grew up eating a lot of Cuban food and I really miss it. There's one restaurant here and they are ok. But they don't serve much variety. I would love a good Paella. Cuban food is one of the few things I really miss about living in Florida.

I know what you mean. One of the things I miss more about Southern California is good Mexican food! The first place I go when I visit my folks is the local Mexican restaurant. We have okay Mexican food here, but it's not the same.

Re: Anyone got a recipe for...

We have pretty decent Mexican food here. The owners are Mexican and so are all the staff. I also lived where there was a fairly large Mexican population and had some really good Mexican food there, so what we get here is actually really good too. What we can't get here, believe it or not is decent pizza or Italian food. All the Italian places that people rave about are horrible. It's pretty bad when Olive Garden is the best Italian Food in town (and there are several locally owned Italian places and their food is NOT italian or not decent Italian.).
Also very hard to get decent Chinese here. But we can get great Indian from several places. There is a fabulous Middle Eastern place. Some god Thai, German and Greek and even some good Vietnamese and Korean.
I wonder why Italian, Pizza and Chinese are so bad here?

Re: Anyone got a recipe for...

We have good pizza and excellent Chinese food in my little town of 5,000 people. A new Mexican restaurant just opened a couple of weeks ago but I haven't tried it yet. I make it a rule not to eat at any restaurant until they've been open at least a month. Let them work out the bugs first.

Re: Anyone got a recipe for...

MRD - we have a fairly significant Hispanic population but there still aren't very many good Mexican restaurants....maybe two and they aren't as good as the one my family frequents on SoCal. This city has an incredible diversity of restaurants, but Mexican is the cuisine that is the most lacking.

The Mexican place here that wins the Best of the City competition every year is DISGUSTING. A friend of mine thinks they win every year because their drinks are really strong!

ETA: back on topic - does anyone have any good lentil recipes? I bought some of the pre-cooked lentils from Trader Joe's and am kind of at a loss as to what to do with them. The Cooking with Trader Joe's cookbook has a good lentil salad recipe, but I'm looking for a hot entree, maybe with rice.

Re: Anyone got a recipe for...

I'll post our favorite lentil recipe in the recipe section. Good luck, my family loves this, I got it from Sunset magazine in the 1970's.

.
I agree--the Mexican food from places that are actually close to Mexico is much better than anything you can get further North, no matter the nationality of the restaurant owner/staff, at least if you want authenticity. The food in some of our local places is 'good', but does not resemble much at all what you get in Tucson, So Texas or San Diego!

About lentils--I use them just as you would any other beans or peas, except they cook a lot faster--you can add them to almost any stews or soups and they are good. I don't use specific recipes, though.
