luvsginger posted this a couple months ago. It's great and cooks up fast. I also add diced ham and saute with the leeks.

A Hearty Potato Leek Soup Recipe for the Last Days of Winter — Pinch My Salt

Potato Leek Soup
3 tablespoons butter
3 leeks, thinly sliced*
1 medium or large onion, chopped
6 - 8 russet potatoes, thinly sliced**
3 1/2 cups chicken broth (or enough to barely cover potatoes)
1 cup heavy cream
salt to taste
fresh ground black pepper to taste
1) Melt butter in a large saucepan over medium heat then add onions and leeks. Cook, stirring, until onions are limp and just slightly brown.
2) Add sliced potatoes to saucepan then pour in enough chicken broth to just barely cover the potatoes. Continue cooking over medium heat until potatoes are tender. Using a potato masher, mash and stir potatoes until desired consistency is reached. As you mash the potatoes and the soup thickens, turn down heat and stir frequently with a large spoon to prevent scorching on the bottom.
3) Add one cup of heavy cream (or more if you desire) and salt and black pepper to taste. Cook 15 minutes more over low heat, stirring frequently, then remove from heat and serve.
Notes: *Make sure to clean leeks thoroughly and slice only the white and light green part of the leeks. **You don’t need to peel the potatoes as the peels add to the rustic texture of the soup. But make sure to scrub them thoroughly and remove any obvious blemishes before slicing. Although we always make it with chicken broth, this can easily become a vegetarian soup by simply using vegetable broth instead.

Thaanks, mrd. I did see that one in that thread yesterday but wanted something much simpler. I found one online and combined it to one in a cookbook. It was quick and easy since I was lazy in a hurry.

Ok, this is for all you southerners. Anyone got a recipe for good old fashioned pecan pralines? Or just pralines without nuts? I have a huge craving after the Gumbo came up.

This was "Grandma Doxie's" recipe. I have never made it, but I sure do remember eating these!

Pralines
1 lb. brown sugar
1/2 cup water
1/4 cup butter
1/2 tsp. vanilla
1 cup pecans

Mix brown sugar, water and butter and boil until syrup forms a soft ball in cold water (about 288 degrees).

Remove from heat, add vanilla and nuts and beat until syrup thickens.

Drop by spoonful onto wax paper and let cool.

Enjoy!

While it's cooking you can season it however you like it. I use a little white pepper and a dash of celery salt. Add the white sauce to the potato mixture and stir. Let it simmer for a while.

I made the pralines last night. I did a little research and sort of came up with a recipe of my own that came out great. Fresh pralines broken up on top of a scoop of french vanilla ice cream....YUMMY!!!

That is pretty much how I do it. Except I cook my potatoes and vegs in a cup or so of chicken stock and add some diced ham or bacon.
