| Re: Anyone got a recipe for... I always thought gumbo, by definition, uses okra, or if there is no okra, file gumbo goes in instead to thicken the stew. Am I wrong, or has the definition of what gumbo is changed?

Gumbos can be broadly divided between the use of okra as a thickener, and recipes using filé powder in that role. But the word Gumbo is derived from the word that African's use for okra, so I'm guessing that originally Gumbo contained okra. I like okra, so to me it isn't Gumbo unless there's okra.

Use small 2"- 4" whole okra pods, Line a jelly roll pan with foil, spread a thin layer of olive oil on the pan Take the okra roll it in the olive oil, just to coat, lay it in a single layer on the pan, sprinkle with salt and pepper and roast in a 400 degree oven. Until lightly brown Turning often and watch, it burns easily. I have been cooking it this way instead of frying ![]() |

| Re: Anyone got a recipe for... Roasted is the only way my family will eat okra. I grew up eating it, so okra slime doesn't bother me. I like it roasted, but I also like it other ways as well.
