I always thought gumbo, by definition, uses okra, or if there is no okra, file gumbo goes in instead to thicken the stew. Am I wrong, or has the definition of what gumbo is changed?

Speaking of Okra... have you ever roasted it?
Use small 2"- 4" whole okra pods,
Line a jelly roll pan with foil, spread a thin layer of olive oil on the pan
Take the okra roll it in the olive oil, just to coat, lay it in a single layer on the pan, sprinkle with salt and pepper and roast in a 400 degree oven.
Until lightly brown
Turning often and watch, it burns easily.
I have been cooking it this way instead of frying![]()

Roasted is the only way my family will eat okra. I grew up eating it, so okra slime doesn't bother me. I like it roasted, but I also like it other ways as well.

Is there still slime if it's roasted? I'd be willing to give it a try if I could get a "no-slime" guarantee..

I cut off the tops before roasting to help in the desliming.
