So this morning for breakfast I made the family eggs benedict. I was going to just use a hollandaise mix, but forgot to pick some up from the store. So made it from scratch. 4 egg yolks, lemon juice, and 1 cup butter. And a couple of other seasonings. Lovely lovely stuff. I poached the eggs a bit longer than what is normally served on eggs benedict because I don't care for runny yolks. And I made the english muffins myself too. (just kidding about that part anyway, everyone liked them. Served with iced coffee and fruit.
