    Not, it's spelled Mole. But it has a thingy over the "e".

    Pronounced Mol-lay and not like the underground rodent.

    Be careful Crit. One of my early cooking disasters was mole. I followed the recipe to the T (or so I thought). I think it is a particular type of unsweetened chocolate that you have to use. Or you could just put some chocolate in the chili....chocolate makes everything better right?

    For the chili, I just used Nestlé's unsweetened cocoa powder. Not a lot -- a rounded tablespoon or so for a big pot. My husband used a teaspoon of the same to amp up the sauce for an enchilada casserole tonight -- turned out great!

    OMG, tonight was one of this week's valentines events at the museum. One of the radio stations co-sponsored and we had food from 5 different places including a cupcake company and a candy company and this incredible cheese plate and this fabulous tapenade with goat cheese, seafood quesedillas and some other stuff. And wine.
    Yep, it's a bad week for calories, but a good week eating.

    I really liked the tapenade thingies.

    In our chili tonight I added a tablespoon of cocoa powder...it tasted just a bit more "there" KWIM?

    And people, I'm telling you, my grandpa was right so many years ago. Try the cocoa powder on your vanilla ice cream. It's yum.

    And want to add: I love cocoa powder.
    I very much believe in rescuing animals, not buying them.

    Tonight we are having a Cuban Carnivale: Cuban pork roast in mojo, yellow rice, black beans and maduros (fried plantains). I can't wait. If only I had authentic Cuban bread which you cannot get up here.
