    I've gotten good at making over-easy eggs, as I like them on top of Kashi 7-grain waffles. I know, I'm weird -- most folks like waffles with something sweet. I wanted to learn how to make poached eggs so that I could still get the texture of "yolk on the move with stationary whites" in a different way. I failed miserably.
    Recently, my hubby bought some silicone poaching cups. You break the egg into the cup, simmer in a covered saucepan or skillet for 6 minutes, and voilą -- an idiot-proof poached egg!

    I remember when I read Angela's Ashes by Frank McCourt about a starving Irish family. There was one part where he riffed on how he would prepare an egg if he could have a whole egg for himself. I craved eggs for the longest time after reading that.

    I like my eggs done.
    Hard boiled, omelets, scrambled, deviled. No runny, no slime. I do eat the yolks, but I've tried the whites only. They're OK, but seem bland. Are poached eggs stiff & done like hard boiled?

    They can be. ( I call that overdone) I like a soft poached egg, hmmm oh yes eggs are wonderful

    I make mine with runny yolks, but if you simmer them for a few more minutes (not sure how long, maybe total of 9 or 10 minutes?), the yolks will be hard-cooked.

    I just had the most delicious breakfast. I had an avocado that needed to be used, some goat cheese I had left out to soften, and some sprouts I grew. I toasted some sourdough bread from the bakery and layered my ingredients on top with some sliced yellow grape tomatoes. OMG.
