    The eggs I like best — even plain— are the ones from a local organic farmer (love our farmers' markets!) who lets the chickens forage and run free.
    The yolks of these eggs are a fairly dark golden yellow in color and have a not-wimpy flavor.

    I love omega 3 eggs the yolk is a dark golden yellow

    A couple of months ago, I was reading a food blog about making scrambled eggs. You mix the eggs (just the eggs) and pour into a skillet that has some butter melted in it. Shake the pan a bit, and use a spatula to move the eggs around. When they're more cooked than not, add a tablespoon of milk (or half-and-half or light cream), and continue to shake and use the spatula. Don't overcook them.

    The eggs come out really creamy and are just divine :-)

    I know about free-range chicken eggs. What are omega-3 eggs and where are they found?

    My favorites, besides omelets, are over easy on top of buttered toast.

    This is the way I eat eggs most of the time. I will also make a pancake and put butter on it then my over easy egg. Yummo.

    I've never experienced a soft-boiled egg, or a poached egg.

    I prefer eggs cooked on top of the stove, too. My favorite way is scrambled, because I can cook them thoroughly. If I fry them, I like them cooked really well done, so the yolk is solid.

    You should be able to find them in any major grocery store. They're eggs that have more omega-3 essential fatty acids. It's one way to boost the omega-3 fats in your diet (these are the really important fats, especially to balance out too much omega-6). I'm just not convinced it's the most economical way to do it.
