    I tasted either kale or collard greens once, and it was so bitter I only ate one bite. Mustard greens have a slight spicy or peppery taste. I don't think mustard greens are at all bitter. I compared mustard greens to spinach because neither tastes bitter to me... but then, I've just eaten canned spinach.

    You know, you are right. It's the mustards that are peppery, and the collards that are a little bitter. I got them turned around around. I like all greens, so far. What I WON'T do is the canned spinach

    I love fresh spinach in salads. Kale is to bitter for my tastes.

    I used babay spinach and baby/young arugula, it was sort of peppery. But made a great salad.

    I like to use baby kale or super greens and spring mix for salads. I found Broccoli slaw mix (broccoli, carrots and red cabbage) and have been buying that to add to my salads. It is cut in thin julienne strips and adds a nice crunch to my salads.

    I've been getting a sprout mix that has fennel sprouts in it. They add a delicious zing to my salads.
