I love soup. During the chicken broth days, I'd make a different soup every Sunday. It was a lot of fun and kept us fed for the week. I think my favorite was the Chicken Noodle with Roasted Root Vegetables. I may have to make some this weekend.

I can't help but think of you now, when I see cans of chicken broth.

I love cream of mushroom soup too!

DH will eat up every single can of soup in this house if given the chance. We've had many arguments over where the cream of whatever disappeared to. lol

OK, now I'm craving mushroom soup. I think I'll have to make it tonight!

Here's 10-minute recipe from food.com - we've made this more times than I can recall. It's unbelievably good!

    Ingredients:

2 (7 ounce) cans chopped mushrooms, undrained
    2 cups water
    2 tablespoons butter
    1 small onion, chopped
    1/4 cup all-purpose flour
    1 teaspoon seasoning salt
1 (12 ounce) can evaporated milk

    Directions:
    Prep Time: 3 mins

    Total Time: 10 mins
1 Drain mushroom liquid into a measuring cup, and add water to make 2 cups.
2 Melt butter in large saucepan over medium heat, add onion and cook until softened; Remove from heat.
3 Stir in flour and seasoning salt.
4 Slowly add the mushroom liquid mixture and milk, stirring to prevent lumps; return to heat.
5 Add mushrooms and cook until mixture comes to a boil.

    Remove from heat and serve.
    Serves 4

Sounds really, really good! I think the non-cook (me!) will have to try it.

I've eaten Campbell's Cream of Mushroom Soup since I was a child. I also remember eating Campbell's French Onion Soup, with the shredded onions in it....if memory serves. It also required cheese and crumbled crackers in it. I don't recall anyone but me eating that in our house.

One of my comfort foods is Campbell's Green Pea soup made with milk instead of water. Eaten with lots of saltine crackers. We all ate it in my family growing up, but mr. veejer and kids turn up their noses at it.

My kids shared my love of velvety pea soup. We liked it with buttered toast, like the owl in one of their favorite kids' books: "Owl at Home."

Pea soup is really good! I've only had one other friend who liked it. We liked it so much that we had the convenient store, in our little college town, made sure they kept some in stock for us.
