Forgot to mention - Regarding Jambalaya vs. Gumbo: Rice is incorporated into the same pot as your Jambalaya. You do the trinity, add the meat, add the heat (spices), deglaze the pot with a bit of wine/broth/beer, add the rice, then add stock to a boil, and reduce the heat/flame to low When the rice done (about 20 mins.), so is your Jambalaya. Mmmmm!

It takes a whole lot longer for Gumbo, and you do your rice separately.

(And, it was a fabulous meal!)

Poppy, can I come visit you? I'll bring cake. And we won't talk politics, there's plenty of other subjects

Any time! I'd love to meet you - and this is the only place I talk politics. We can dish on everything else.

I think it's about time for another FORT hen party, myself. I say do it nearest to MRD's house this time since we have been to AL and GA. I'll rent us a place with a stove and fridge so we can bring food.
PHroshay, so much for Southern cooking klling you early!

Well of course we do, Unk! And we're more fun, I bet, plus the hens in that photo look kinda scrawny to me, like the food wouldn't be as good !
