Forgot to mention - Regarding Jambalaya vs. Gumbo: Rice is incorporated into the same pot as your Jambalaya. You do the trinity, add the meat, add the heat (spices), deglaze the pot with a bit of wine/broth/beer, add the rice, then add stock to a boil, and reduce the heat/flame to low When the rice done (about 20 mins.), so is your Jambalaya. Mmmmm!
It takes a whole lot longer for Gumbo, and you do your rice separately.
