It's going to hold in the low to mid 50s today. Chili, anyone?

I've often wondered about the ground chicken, but I've never tried it. It spooks me a little. I'm using ground turkey today.

If my son was at home, I'd buy some and let him be my guinea pig. Hey! Kids ARE good for something other than aggravation!! Imagine that!

prhoshay - if you have a food processor (and I bet you do - aren't you one of the kitchen gadget queens ), you could try grinding your own chicken breasts to perhaps knock down the spook factor.

You are right...I do love kitchen gadgets/toys, but the idea of grinding meat is less than enchanting. I guess I could buy the breasts at the store and have them grind it? I can be a squeamish sissy (she says as she gets green around the gills!).

yw MRD. My dogs like it also. The leftovers are even better. Who knew oatmeal could be so good?

I made some roasted eggplant dip today. I'm going to serve it with fresh veggies for an afternoon snack to the family.

I find the ground chicken to have a better taste than ground turkey.

Yes, LIvin, who knew oatmeal could be so good? I have only ever had instant, so was very impressed with this. And it was better the next day.

I have a question about tofu. I bought some extra firm tofu and it got frozen in my fridge. Could I thaw it out and use it or is it ruined?

It's fine. Go ahead and use it. I love tofu. My favorite way to use it is so simple... tomato soup with curry powder, diced tofu, and peas. mmmmmmm.

So far, I've not met any tofu that I like. I think it's the texture; to me it's like a boiled egg white. I do know that some people love it, but I can't figure it out.

You're not the only one. But I do like meat and fish in most forms, and I've also been trying to stick to eating what I like rather than forcing down something that I want to like, so I've given up trying, too.

That sounds very good to me. Do you fry the tofu first or just drop it in the soup? Or cook it IN the soup? Fresh peas or frozen? Sorry for the questions, but I love tomato soup and I like the idea of getting some protein in a serving.
