Now that Thanksgiving is over. Here's a recipe that has become a tradition on Thanksgiving weekend in our house. It's great because it uses the leftovers and tastes great.

Potato topped Turkey a la king.

2 tbsp. butter
1/4 c. sliced green onions
1/3 c. all purpose flour
1/2 tsp. salt
1/8 tsp. pepper
1 14 1/2 oz can chicken broth
1/2 c. milk
2 cups cooked cubed turkey (or chicken)
1 cup green peas (I use frozen and thaw them, of if you have leftovers use those)

Topping
3-4 cups mashed potatos
1 egg
1 clove garlic minced
2 tbsp, chopped green onions
Paprika

Pre-heat oven to 350. Melt the butter in a saucepan, add the onions and cook for one min. Add flour and s & p, stir until blended. Gradually add broth and 1/2 c. milk. Cook until mixture boilss and thickens, stirring constantly. Add chicken and peas and mix well. Spoon into a 2 greased 2 quart casserole.

Warm potatos and add egg and garlic.

Spoon or pipe potatos over top of casserole. Top with green onions and paprika. Bake for 30 min. or until casserole is bubbly and potatos are light golden brown.

That sounds really good MRD. I usually do a turkey tetrazzini. I freeze any leftover turkey and wait a couple weeks though. By then we aren't so sick of turkey.

I need a good recipe for leftover mashed potatoes. I have so much leftover! I might just make gnocchi but am open to ideas!
Anyway, here is a very simple recipe to have on hand for the holidays.

Rosemary Cashews

1 lb roasted unsalted cashews
2 Tablespoons minced rosemary
2 teaspoons light brown sugar
1/2 teaspoon cayenne pepper
1 Tablespoon melted butter

Preheat oven 350 degrees

Toast cashews in oven for about 5 minutes

Mix ingredients in bowl and toss with cashews until well coated. Serve warm.

I like to make potato pancakes with them. Just add minced onion, a raw egg, some spices. Form into a patty and brown in a greased skillet.

I made gnocchi with Bunny's mom's sauce recipe last night! It was over the top good! I had 5 cups of leftover mashed potatoes from Thanksgiving and the following is the recipe for gnocchi that I used. I doubled it and it came out great, it was so simple!!!

Ingredients

Serves 4
2 1/2 cups cold leftover mashed potatoes
1 large egg yolk
3 tablespoons extra-virgin olive oil
1 1/4 cups all-purpose flour, plus more for dusting
1 teaspoon salt
3 tablespoons unsalted butter
Pinch freshly ground black pepper

Directions

In a medium bowl, combine potatoes, egg yolk, olive oil, flour, and 3/4 teaspoon salt. Using a wooden spoon, stir until incorporated. Divide dough into fourths. Line a baking sheet with parchment paper or waxed paper.
On a lightly floured work surface, roll 1/4 of the dough into a 3/4-inch-diameter log. Cut the log into 3/4-inch-long pieces. Pick up one piece of dough, and press onto the back of a fork with your thumb. Still using your thumb, roll dough off fork, forming a "C" shape; the indentations from the tines should be visible. Place the gnocchi on the prepared baking sheet. Repeat process with the remaining pieces of dough, arranging finished gnocchi in a single layer. Repeat with the remaining 3 portions of dough.
(I stack the layers between sheets of paper and freeze until ready to use)
Fill a large saucepan with water, and add 2 teaspoons salt; bring to a boil. Have ready a colander set over a bowl. Add 1/4 of the gnocchi, and cook until they float to the top, 1 to 2 minutes. Using a slotted spoon, transfer cooked gnocchi to the colander. Cook the remaining gnocchi.
Serve with your favorite sauce (bunny's mom's sauce is my new favorite!)

Here is a recipe for another sauce that goes well with gnocchi.


Butter-Sage Sauce

Ingredients
3 Tablespoons butter
freshly ground black pepper
8 fresh sage leaves, finely sliced
1/4 cup grated parmesan cheese

Place a large saute pan over medium-high heat. Add butter. When butter begins to brown, about 2 minutes, add pepper and the remaining 1/4 teaspoon salt. Increase heat to high. Add the gnocchi and sage. Cook, stirring occasionally, until the sage has wilted and the gnocchi have heated through, 1 1/2 minutes. Serve immediately, with a sprinkle of Parmesan cheese.

That sounds delicious! I love Cashews. Are they still as tasty if they are not warm? I was thinking about making some and putting them in cute bags as gifts.

Yes! They are delicious warm or cold. The trick is to really mince the rosemary. They will not disappoint!!! Let me know how they turn out!
I usually give nuts out at Christmas time too but they are usually sweet so this is a nice change.

I have a friend that makes these every Christmas. You will NEVER want a York Peppermint patty again after trying these.


Creamy Peppermint Patties


1 package (8 oz) cream cheese, softened
1 tsp peppermint extract
9 cups confectioners sugar
3/4 cup milk chocolate chips
3/4 semi sweet chocolate chips
3 Tsp shortening

beat the cream cheese and extract til smooth. gradually add confectioners sugar beating well.
shape into 1 inch balls. Place them on wax paper lined baking sheets. flatten into patties. cover and refridgerate for 1 hour or until chilled.
In a microwave melt chips and shortening until smooth. allow to cool slightly. dip patties into chocolate, place on wax paper until firm. yields..about 4 dozen.

Nancy's tip...i use all semi sweet chip and i seem to need more that this recipe calls for. also once i dip the patties i put them back in the fridge, they never harden nicely at room temp...enjoy!!!
