| Re: Just Recipes Lucy: I just made this for dinner tonight. Literally just put it in the fridge to chill. I love the taste of the dressing, but cut the sugar a bit because I like tart. Also, 3 cucumbers is a lot; I used about 2/3 of an english cuke. I adjusted the veggie amounts quite a bit, and made a large bowl. I bought fresh whole wheat linguine and used 4 nests, but wish I had used 3. After it was all tossed together I gave an additional sprinkle of olive oil and juice of another 1/2 lime. I love cilantro, and ginger, so this is a great summer salad. It makes a lot. It wasn't all that much work, as I used my Multipractic wand thingie (hand held blender??) to combine the dressing ingredients and only roughly chopped the ginger etc. beforehand. It's really hot here today (32C, about 90F) so I am cedar planking a salmon and grilling asparagus on the BBQ to go along with this salad. | |

| Re: Just Recipes It was a pretty good salad, but I have another recipe that I prefer. Always good to change things up though. Right now I am doing a lot of quinoa salads with roasted veggies since my vegetarian daughter is home for the summer ![]() | |

| Re: Just Recipes I don't blame you norealityhere. The chicken recipe was really good and so was the tzatziki sauce. A good summer dish. I love doing my cooking earlier in the day and then at supper just pulling it out of the fridge..

| Re: Just Recipes I found a great alternative to pizza that is kind of healthy (and gluten and dairy free!) Cornbread Taco Pizza 1 package of cornbread mix. make in a circular glass pie pan if you can (1 package makes 2 pizzas, you want the CB thinner than normal) 1 lb of lean ground beef or turkey and 1 packet of taco seasoning. Make as instructed on the packet. Divide meat between cornbreads and spread in an even layer. 1 chopped tomato, 1 cup of sliced black olives, 1 cup of onions or peppers or both. Layer across the beef. Sprinkle top with shreaded lettuce Drizzle the top with taco sauce (to taste). It is absolutely delicious!!! |

| Re: Just Recipes I'm breaking this out again because I got rave reviews for it last night. It's super easy. I usually have the ingredients on hand and everyone loves it. I first had it and it was delicious, then found out it had canned chicken in it and couldn't belive it as I never thought I"d eat canned chicken. ![]() But I have never had anyone not like this and it's always a hit and easy to make ahead and also freezes well. Chicken Cheese Ball 1 large can of white meat chicken, drained and flaked with a fork 2 8 oz packages of cream cheese softened 1/4 cup minced onion Mix everything together and form into one or two balls. Can roll the balls in chopped pecans or parsley. Serve with crackers. (my husband likes it as a sandwich spread too) Refrigerate the ball at least 2-4 hours before servinging.
