    MRD ... I am feeling ashamed for running out of whipped cream for the pumpkin pie, and I like it in my coffee too.

    And about the sweet potato chips, I have had them ... most recently at Cheeseburger in Paradise when someone treated us for dinner. I thought they were very good !

    I also had a friend years ago, who did meatless Christmas Eve and as part of it would slice sweet potatoes on a large diagonal, dip them in tempura batter and deep fry. They were to die for.

    That's where I had them yesterday at Cheeseburger in Paradise. We'd never eaten there and it was close to my daughter's work, so that's why we stopped. Great place. I don't know why I've never eaten at one. Have been to Margaritaville many times, but we don't have one of those up here.

    Aw heck ... is it time to eat healthy again ?

    I'm not a deep fryer in general so I've never done it with sweet potatoes. My friend/neighbor does it al lot and I always come home smelling like french fries or eggrolls or something. I'll have to try baking the sweet potato chips though. Sounds good. I love sweet potatoes and just bake them or nuke them and eat with a little unsalted butter and sometimes some pancake syrup !

    You can also cut the sweet potatoes into wedges, drizzle with olive oil and a little seasoning and bake them. You then have sweet potato wedges that are great.

    I love sweet potatoes. Believe it or not, I've never eaten sweet potato casserole that everyone has been talking about. I grew up eating them baked in the oven and then eating like a regular baked potato. That is my favorite way to eat them but I'm definitely going to try the chips.

    Have you tried the newer silicone kind that withstand extreme temperatures? I love those! Wood can harbor bacteria, especially as you aren't supposed to run wooden things through the dishwasher. I did have a cheaper silicone spatula whose handle melted a little when it was resting against the pot (although now you can find little silicone spoon holders you clip to the pot too), so my advice would be to find utensils that are one piece all the way up made of the strong material. They will usually say on the package how many degrees of temperature they can withstand, for instance 600º. They clean up very easily too, like a non-stick material.

    I've found a lot of silicone utensils at Tuesday Morning for just a couple of dollars, each. They've got some fun colors, and have become my favorite pieces. (I haven't seen the wooden spoon that I won't run through my dishwasher.)

    I've never had sweet potato casserole either, but I do love sweet potatoes. My grocery store sells them peeled and cut into french fries in bags, which I love because I hate peeling the damned things. I do the same thing as YG - a little olive oil and seasoning and baked in the oven. Salt, pepper and chili powder is really good on them.

    MRD, do you have to brown or parboil the ribs before you put them in the crock? I'm lazy and don't like crockpot recipes where you have to brown the meat first.
