    Marybeth, before I called my neighbor and got her cranberry white chocolate recipe, I googled biscotti and found quite a few that were pretty complicated and seemed like a huge ordeal, so I nixed them. :nono I knew my neighbor's daughter had made their recipe several times so I figured it must be simpler.

    Lil, yours sounds wonderful and I put the recipe in my cookbook. Thank you.

    MRD talking about Gut's peach cobbler got to me today. I had quite a few nectarines and peaches that needed to be used so I made a double batch and it is really good! Many thanks, Gut.

    top. It turned out golden and slightly crunchy and just perfect. Last time I made cobbler, the batter was too doughy. I have been trying to eat better, so I only had a very small serving. My husband has PLOWED his way through it. But that is a keeper recipe that is going in my recipe book. Thanks.

    Has anyone ever eaten raw beets? I just read an article that said raw were much better for you. Here is the link:

    Yes, they are quite good. Very sweet and crunchy. I LOVE beets, but no one else in my family shares the love. My inlaws used to grow them and I would love getting a bunch of fresh ones.

    All raw vegetables are better for you than cooked ones as the cooking leaches out the nutrients, especially if you boil them. That's why I steam or roast most of mine.

    Ok. I'll try it. Just get some raw and cut them up I assume? I like cooked beets a lot..

    Also going to give swiss chard a try. The recipe I read was a quick stir-fry with garlic. Being a baby boomer, all my veggies were cooked to mush and turned me off a lot of them.

    They are kind of hard to peel raw and you don't want to eat the peel.
    I don't know if the dropping them in boiling water nad then ice water would work on the skins like it does on tomatos and peaches.

    But I would peel them and then cut them into "sticks" to eat. But be prepared. Eaten raw and in a large quantity, they have a bit of a laxative effect. All that fiber you know.

    Yep, I grew up on mushy vegetables too. But now I like them more "al dente" when I steam them and I love the crunchiness they get when you roast them.

    Hmm, I've never oven roasted beets. Wondering how that would taste. I've had beet chips where they've been fried and those were quite good.


    I just read an article about arthritis and other "inflammation" and certain foods that aggravate it. The nightshade family which includes tomatos, potatos, peppers and eggplant can cause flareups and should be avoided.
    Tobacco is also part of this family and smoking can also cause inflammation problems if you are prone to arthritis and other inflammatory pain conditions.

    I won't have a problem with eggplant and most peppers, but I LOVE tomatos and potatos.
    I swear between this and my new hypoglycemic diet, I'm going to be reduced to eating brown rice and tofu and that's going to be it!

    Good Grief,......"beet people"! I guess I'm just not great with root vegetables. I have to force myself to tolerate carrots, and I'd just as soon not. And I'm the one who raves about pickled okra, and that usually turns everybody off!

    If anyone knows a recipe for carrot soup, though....I do adore that! It is a hearty, cool weather dish that is to die for. My friend created a recipe for it, after having it in New Orleans, and she's lost it. Hopefully, cool weather hasn't forgotten where I live.

    I put it on top also, and frankly never even thought of putting it on the bottom. Just in case I haven't made it perfectly clear, it is a fabulous recipe.

    Yes, I'm with you on this. I've had a yearning for brussel sprouts lately, and have been steaming them. Mr. Rose (who is typically game for anything) has steered clear, but decided to give them a try last night and said he had no idea they could be so good. He wondered aloud what in the hell people did to vegetables in the 60's to make them taste so awful, and the only thing I could think of was that our parents cooked them to mush, just like you said.

    Shay, my MIL has a great recipe for cold carrot soup and is looking for it as I type this. When she calls back, I'll post it.
