    Anyone ever make biscotti? I love to bake, but haven't ventured into biscotti yet - not sure if it's easy or not...any good recipes? I found a ton online but I always like to try a recipe that's been tried out before.

    Roses - You still have my address right? I'd happily accept some of those biscuits They sound yummy!

    Does anyone have a simple and quick recipe for tortilla soup? I have chicken, chicken broth, salsa and tortillas. I'd like to NOT have a recipe that requires a huge bunch of prep work and chopping of veggies (hence, the salsa!). I found a recipe online, but (like marybeth) I'd rather use a recipe someone has already tried. With the temps at around 100 right now, I must be crazy to think about making soup, but it sounded really good!

    I've got tons of chicken right now that I'm looking for ways to prepare. Safeway had thighs on sale for just over $1/lb and I stocked up. I love to roast them in white wine with potatoes, onions and carrots (), but I thought I'd try something different.

    marybeth, I have a good one for chocolate almond biscotti. I'll have to go dig it up first though.

    This isn't quite what you're looking for, as it's not tortilla soup, but I make chicken chili that's really yummy, and I think what I've learned is, you can't really do it wrong. http://www.fansofrealitytv.com/forum...ml#post2076078

    The key in mine, though, is packets of chicken chili mix from the store, so I don't know if you can find that or not.

    Marybeth, Lil's chocolate almond recipe sounds great. This recipe is from my neighbor but she got it on Recipezaar, and is white chocolate/cranberry, so now you can make two different kinds. I've eaten these and they're wonderful; she does not drizzle with chocolate as it instructs at the end.

    Cranberry White Chocolate Biscotti

    1 batch 50 min 20 min prep

    2 1/4 cups flour
    1 1/2 tablespoons baking powder
    1/4 teaspoon salt
    1/2 cup butter, plus
    2 tablespoons butter
    3/4 cup granulated sugar
    2 eggs
    1 teaspoon vanilla
    1 1/2 cups white chocolate chips
    1 cup dried cranberries
    milk chocolate

    Preheat oven to 325.
    In small bowl, mix flour, baking powder and salt.
    In large bowl, beat butter and sugar until light and fluffy. Beat in eggs and vanilla. Gradually add flour mixture, beating well after each addition. Stir in white chocolate and cranberries.
    Divide dough into 2 equal portions. On floured board, shape into 2 logs, each 14 inches long 1 1/2 inches wide and 1 inches thick. Place 2 inches apart on greased and floured baking sheet.
    Bake 25 min., or until lightly browned. Remove from baking sheet. Place on cutting board, cool 5 minute.
    Using serrated knife, cut each log into diagonal slices about 3/4 in thick. Place slices flat on baking sheet 1/2 inches apart. Bake 10 min, or until slightly dry. Remove from baking sheet and cool on wire rack. Drizzle with melted chocolate, let chocolate dry. Store in tightly covered container.

    critical.........at first glance I thought you were looking for a recipe for totellini soup. I have a great one of those. The tortilla soup I've made :

    Ingredients:


    4 corn tortillas (6"), cut into strips
    2 cans (14 oz. each) SwansonŽ Chicken Broth (3 1/2 cups)
    1/2 cup PaceŽ Picante Sauce
    1 tsp. garlic powder
    1 can (14 1/2 oz.) whole peeled tomatoes, cut up
    2 medium carrots, shredded
    1 1/2 cups chopped cooked chicken



    Directions:



    BAKE tortilla strips on baking sheet at 400°F. for 15 min. or until golden.

    MIX broth, picante sauce, garlic powder, tomatoes and carrots in saucepan. Heat to a boil. Cook over low heat 5 min.

    ADD chicken and heat through.

    LADLE soup into bowls and top with tortilla strips.

    TIP: For 1 1/2 cups chopped cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 3/4 lb. boneless chicken breasts or thighs, cubed, 5 min. or until chicken is done. Drain and chop chicken.

    Marybeth, I have a recipe for almond cranberry biscotti that is also very good. Basically, you can take your recipe or lil's and just change what you put inside.

    Biscotti are surprisingly easy to make. The only thing that is a little more complicated or tedious is cooking twice, while making sure it doesn't burn.

    Ah, that is exactly what I did because I am trying to get rid of packaged foods in the pantry (changing our evil eating habits slowly, but not willing to throw out perfectly good food) and had some stovetop. I was looking for a sauce or something as I always make dry pork chops (not intentionally. ). But I just opened a can of cream of mushroom soup and poured over them. Hubby thought they were good and ate like a fiend. I had a very small amount of stuffing and it was reallly good (stuffing is one of my very favorite dishes. I could just eat the stuffing at Tgiving and be happy). I ate left over beans (with smoked turkey wings) and brown rice as I'm really trying to be good on my hypoglycemic diet.

    Then I really went and blew it all out of the water by making Gut's peach cobbler. I bought peaches at the farmer's market on Sat. and they were already getting overripe by yesterday, so needed to use them. Then realized I was almost out of sugar and I used 1/2 cup of brown sugar and 1/4 cup of white. I also added in about 1/2 tsp. cinnamon. Oh man, It was to die for. I did restrict myself to a very, very small helping and sent the rest with hubby to work today for him to share.
    But Gut, that is definetly a killer recipe. The crust was JUST RIGHT. Just how cobbler is supposed to be!

    Tonight we are having Italian veggie loaf. Made with brown rice, lentils, tomato sauce and other veggies, including corn and spinach. It looked good on tv, so hoping it tastes good. My daughter is trying to be vegetarian again and I'm trying to eat good carbs and protien. But I would love some more peach cobbler. Good thing I sent it away. ( I guess meanwhile Hubby is getting to eat all the "bad" foods and will need to go on a diet when I'm done purging the pantry, but at least he has 2 more pork chops to take to work for lunch this week).

    Anyone with any vegetarian recipes???

    marybeth, here's the one I've made. It's from Jenny Jones' Look Good Feel Great Cookbook.

    Chocolate-Almond Biscotti

    2/3 cup whole raw almonds
    1 and 3/4 cups all-purpose flour
    1/3 cup unsweetened cocoa
    1 teaspoon baking soda
    1/4 tsp salt
    3 large eggs
    1 cup sugar
    1 tsp vanilla extract

    Preheat oven to 350. Line a large baking sheet with parchment paper.

    Spread almonds on another ungreased baking sheet and toast in oven for 7-10 minutes. Spread on a plate to cool. Reduce oven temperature to 300.

    In a medium bowl, sift together the flour, cocoa, baking soda, and salt.

    In a large mixing bowl, beat eggs on medium speed. Slowly add sugar while beating. Continue beating for 5 minutes until thick. Stir in vanilla.

    Coarsely chop the cooled almonds. With mixer on low speed, combine flour and egg mixtures. Stir in chopped almonds.

    Remove mixture to a floured work surface and knead 10 times. It will be very sticky. Use a floured spatula to lift.

    Transfer to the lined baking sheet and shape into a log about 14 x 5 inches. Bake for 45 minutes.

    Remove from oven and cool for 10 minutes. Transfer to cutting board and slice into 1/2 inch thick pieces (A serrated knife works best).

    Carefully place slices directly on oven rack and bake 10-15 minutes more, or until dry. Cool completely.


    I've also thrown in chocolate chips. Can't have too much chocolate!
