A Nanaimo bar is a Canadian dessert of some sort. If you google it, you'll get all kinds of recipes.
Thanks, erin dye! For the other nut cases out there I'm attaching a recipe. It's named after a town on Vancouver Island and suddenly appeared in various community cookbooks starting in the 50's or so. However it may originally have been called Chocalate Slice or NY Slice. As far as I can tell this is what the town is mostly famous for, although it also has a bathtub race and used to have coal mining. Apparently a nice harbor and pretty.
There's a picture on one of the sites where it looks something like an ice cream sandwich, but as you can see from the recipe would probably taste quite differently. These would definitely belong on the temptation table, not on the training table!
Base
2 squares (oz.) semi-sweet chocolate
2 cups graham cracker crumbs
1 cup cocnut
1/2 cup softened butter
1/2 cupt chopped walnuts
2 tablespoons sugar
1 teaspoon vanilla
1 egg
Filling
1/4 cup butter, softened
3 tablespoons milk
2 tablespoons instant vanilla pudding
2 cups confectioners (powdered) sugar
Glaze
4 squares (oz.) semi-sweet chocolate
1 tablespoon butter
Procedure:
Base
Combine ingredients. Press into 9 inch square cake pan. Chill.
Filling
Combine butter, milk, and custard powder. Blend in confectioner's sugar. Spread over base. Chill at least 15 minutes.
Glaze
Partially melt chocolate and butter. Remove from heat and sitr until melted. Spread over custard layer. Chill.
Store in refrigerator, covered, up to 1 month. Makes 24 bars.
Serve chilled. They're rich, so small portions may be appropriate.
Variation: Add peppermint extract and green food coloring to the middle layer.
