I don't know if Amanda is in fact dating Stryker, but they both acted too weird and uncomfortable for it to be nothing. Ellen wouldn't have brought it up or said the things she did if they weren't at the very least hanging out.

Maybe they are just attracted to each other - and want to hang out - maybe Ellen helped that happen
