To add a bit of quirkiness, why not the Roches? Those girls can sing, and can also fly in the face of doing things according to accepted standards. Alison Kraus and Vince Gill also come to mind as people who would never be asked, but would probably be able to give a lot of guidance and sage advice on singing and performing.
I thought both Lulu and whoever did the coaching for the guys during that week were both very good too. The one advantage I think that Barry Manilow has over every other coach/mentor is his behind-the-microphone experience. I saw a clip of Denis DeYoung from when he appeard on Canadian Idol and thought it'd be cool to have him on as a mentor. I think he fits a good singer/songwriter mold even if Styx weren't the theme (Mr. Roboto group song anyone?)
