if you are going to use a Yield or a U-Turn, you need to use it against a team that is behind you. All of the teams that are ahead of you have already passed it and moved on to the next task. And it makes more sense to use it if you are near the pack of the racers, because it might actually save you from getting eliminated. It also makes the most sense to U-Turn someone that is in last or almost last because then (unless it is a NEL) they'll be eliminated and won't be around to exact revenge. The U-Turn is part of the race, just as the Yield was and the Fast Forward used to be. I preferred the Fast Forward, but I think that feature involved setting up a whole other challenge, so a lot of production time and work, whereas with the U-Turn or Yield they only need to work with the challenges (or an hourglass) without adding more set-up for the show. If you're in the front of the pack, you won't need it, so why risk ticking off another team that might still be around to be angry? If you're in the back of the pack and worried this might be your last leg, then wouldn't you feel silly if you didn't use it and ended up out of the race. Like Survivor's James would feel if he goes home with two immunity idols in his bag - maybe you should use the advantages that the game provides. Just my thoughts.
